| 主要技术内容 | 该标准规定了白酒酿造用高粱原料的品种、种植、加工、验收、运输与贮存等管控要求。品种需选适宜酿造的红缨子等,淀粉≥60%、单宁>0.5%,分大小颗粒及粳糯类型。种植管控含产地环境(土壤、空气、灌溉水)、栽种、施肥、水分、病虫害防治及采收要求。加工处理涉及清理除杂、粉碎(分香型定粒度)、润粮、蒸煮糖化等。验收含感官、理化、卫生安全指标及检验方法,不合格品有对应处理措施。运输与贮存规定了条件、监控及信息管理等。 This standard stipulates the control requirements for the variety, planting, processing, acceptance, transportation, and storage of sorghum raw materials used in the brewing of Baijiu. The variety should be selected from suitable brewing sorghum such as Hongyingzi, with starch content of ≥60% and tannin content of >0.5%, and it should be divided into large and small particles as well as glutinous and non-glutinous types. Planting control includes requirements for the production environment (soil, air, irrigation water), planting, fertilization, water management, pest and disease control, and harvesting. Processing involves cleaning and impurity removal, crushing (with particle size determined by flavor type), grain moistening, steaming, saccharification, etc. Acceptance includes sensory, physicochemical, hygiene and safety indicators as well as inspection methods, and there are corresponding measures for handling non-conforming products. Transportation and storage stipulate conditions, monitoring, and information management. |
